Mango Crepe Roll 🥭 Recipe included in description 😊#foodshorts #cookingshorts #mango #mangorecipe

🗒️ Mango Crepes Ingredients:

🥚 5 eggs
🧂 50g/1.7oz white sugar
🧂 Pinch of salt
🥃 1tsp vanilla extract
🌾 260g/9.2oz cake flour
🥛 600g/21oz milk
🥭 50g/1.7oz mango puree
🧈 80g/2.8oz melted unsalted butter
🍯 Yellow food colour (optional)

Crepes Recipe
1. Whisk sugar, salt, and vanilla extract together
2. While whisking, add some flour followed by milk, and alternate between the two until both are incorporated (doing this will minimise lumps).
3. Add mango puree, butter, and food colouring (if using) and mix until well combined.
4. Filter through a sieve, cover with plastic wrap, and mature in the refrigerator for about an hour.
5. Heat a non-stick fry pan over medium heat, ladle in crepe mixture, turning to coat the base of the pan completely. Cook for 1-2 minutes until the crepe releases. Turn over and cook for 10-15 seconds. Repeat using the remaining crepe batter.

🗒️ Mango Swiss Meringue Buttercream Ingredients:

🥚 3 (90g/3.2oz) egg whites
🧂 100g/3.5oz white sugar
🧈 230g/8.1oz unsalted butter, room temperature and cubed
🥃 1 tsp vanilla extract
🥭 60g/2.1oz mango puree
🍯 Yellow food colour (optional)

Buttercream Recipe
1. Place egg whites and sugar in the bowl of the stand mixer.
2. Using a whisk, place the bowl over a double boiler and whisk until all the sugar has dissolved and egg whites are warm (around 70 C or 160 F).
3.Take the bowl off the heat and using the stand mixer, whisk the egg whites until stiff peaks.
4. When the bowl feels only slightly warm, gradually add butter one cube at a time with the mixer at medium speed until creamy
5. Add the vanilla and combine well until everything is mixed in. If using food colouring, add it now and mix well.

To Assemble

1. If a round frypan was used, trim to form rectangles/squares. Lay the crepes out side by side, with 4cm of each crepe overlapping the previous one.
2. Use the buttercream to stick the overlapped section together. And spread a thin layer of buttercream across all the crepes.
